Slow Cooker BBQ Ribs






I was about to put my ribs in the slow cooker.
I like to use Coca Cola in mine. But, I didn't have any.
Soooo....I decided to check out a few of my favorite blogs
and I found this one. Lo and behold...she had a solution to my problem.
She used Root Beer over her ribs!
Wa La...my problem is solved!

Slow Cooker Country Style Pork Ribs

3 1/2 lbs Country Style Pork Ribs
Pork Rub
1 cup BBQ sauce (spicy or not)
1 cup Root Beer
1 onion, sliced

Sprinkle both sides of ribs with pork rub.
Place ribs in bottom of slow cooker.
Add 1/2 cup BBQ sauce and root beer.
Place remaining ribs on top. 
Add remaining sauce and root beer.
Cover and cook on low for 8 hours.

You will have tender, fall off the bone, delicious ribs!

Cracker Crumb Breaded Chops



There are so many ways to prepare pork chops.
Breaded is a favorite of ours. 
But... there are so many 
recipes for breading
This recipe is a simple, but delicious way to bread those chops....
soft breaded or crispy. 
It's your choice.
Cracker Crumb Breaded Chops

1 cup crushed crackers
(I use 3/4 sleeve of Ritz)
1 tsp garlic salt
1/2 tsp black pepper
2 eggs
4 pork chops
(I used boneless)
1/2 cup butter

In a shallow bowl, beat eggs.
In another shallow bowl, combine bread crumbs, 
garlic salt and pepper.

Dip the pork chops in the eggs,
then in the cracker crumb mixture. 

Place pork chops in a ungreased baking dish.
Spoon butter around pork chops.


Bake, covered, on 375*
for 45 minutes.

For a crispier crust, remove cover after 35 minutes, 
and bake until done...approx 15 - 20 minutes.

Pork and Corn Stuffing Bake



Years ago, I found this recipe on the back of a Campbell's Golden Corn Soup can. They no longer make that kind of soup, so Campbell's has come up with alternate version of this recipe and it's just as delicious!
But.....of course, I made a few changes!

I've prepared this recipe without the 
pork chops many times before. 
It became an 'asked-for' dish for BBQ's and potlucks.

The pork chops are tender, with a little zip to them. 
The stuffing is full of flavor.

And, the combination of the two is....
DELICIOUS!

Pork and Corn Stuffing Bake
1 1/2 cups cornbread or herb seasoned stuffing
1 can cream of celery soup
1/2 cup whole kernel corn
1 small onion, finely chopped (about 1/4 cup)
1/4 cup finely chopped celery
4 boneless poke chops, 3/4 inch thick (about 1 lb)
1/8 cup melted butter
1 TBSP brown sugar
1 1/2 tsp spicy brown mustard

Stir the stuffing, soup, corn, onion and celery in a medium bowl.
Spoon the stuffing mixture into a greased 9 in pie plate or 8x8 baking dish.

Mix together butter, brown sugar and mustard.
Pour half over the stuffing mixture.

Place pork chops on top.
Spoon remaining mustard mixture over pork chops.

Bake at 400* for 30 minutes or until the pork is cook through. 

This recipe is easily doubled.

Pork Loin Roast w/veggies and smoke sausage- Slow Cooker



 As I was getting ready to put the ingredients in the slow cooker this morning, I realized I was missing one ingredient. So, I got out my other recipe. Well, I was missing one ingredient from that one too! 
Lucky for me, my oldest son had just walked in the door and he came to my rescue! 
"Mom...put in your veggies, broth, pork, then add smoked sausage and cream of chicken soup." 
What an odd combination, I thought. 
Oh my...that boy of mine knew what he was talking about!!
The only thing I added extra was a bit of Weber Kickin' Chicken for a little extra flavor. 
I do believe that this is now one of the best 
Pork Loin Roasts I have ever made!! 
And who better to share the recipe with than you!


Pork Loin Roast w/ Veggies and Smoked Sausage

2 cups fresh or frozen green beans
(I used fresh)
5 medium or 4 large red potatoes, cut in to 1 1/1" pieces
14.5 can chicken broth
5 lb pork loin roast
13 oz pkg smoke sausage, cut in to 1/2 to 3/4" pieces
10.5 oz cream of chicken soup
2 tsp Weber Kickin' Chicken seasoning

Add green beans and potatoes to slow cooker.
Pour broth over potatoes.


 Add the roast on top of potatoes
Sprinkle roast with seasoning.
Add smoked sausage on top of roast.

 Spoon cream of chicken soup on top of sausage.

Cover and cook on low for approx 7 hours.

And that's it folks! 
Moist. Tender. Juicy.
Great flavor!
 
Supper. Is. Ready!!

Zesty Baked Pork Chops

I love a big thick cut pork chop. 
I'm so happy when they go on sale. 
...like a kid in the candy shop!
I have found that pork absorbs flavor very well, 
so I try not to over spice or sauce my chops.
This recipe has a mild zesty flavor.
I call them Zesty Pork Chops because I use the 
Thick and Zesty sauce....
which is generic for Heinz 57.
Yep...I'm a big WalMart shopper.
We have two grocery stores in my town...
WalMart is the cheapest.
And neither one double coupon!! 
for shame....for shame!

Anyway...where was I?
Oh yea...the recipe....

Zesty Baked Pork Chops
2 TBSP Heinz 57 sauce
1 tsp lemon juice
2 TBSP brown sugar
2 TBSP ketchup
Place meat in a dish sprayed with non-stick spray.
Mix all ingredients together in a small bowl.
 Brush sauce over each pork chop.

Bake at 350* for 20 minutes.
Turn chops over, baste with remaining sauce.
Continue to bake until meat is done and juices run clear. 
Depending on the thickness of your chops, this could be 10 - 30 minutes. 



 Tender, juicy, mildly sweet, but tangy, flavor!

Apple or Pineapple Ham Steaks


I had a lot of last minute company coming for supper,
three Ham Steaks in the freezer,
and I was missing one ingredient that I normally
add to these steaks. 
So, I improvised!

Apple or Pineapple Ham Steaks

Ham Steak
1 cup Apple juice
1 cup water
1 TBSP Soy Sauce
2 TBSP light brown sugar. 

You can also add sliced apples when you add the ham to the juice.
Or use a can of Pineapple chunks with the juice 
in place of Apple Juice.

Mix ingredients in a bowl 
and pour in to a medium-large skillet. 

Place ham steak in skillet. 
Spoon juices over top of ham. 

Heat on high until boiling, 
then reduce to medium-low heat.
Continue to cook for approx 5 - 7 minutes.
Turn over and cook for approx 5- 7 more minutes. 
Remove from skillet and put on plate. 

I cooked three Ham Steaks....
all using the same juice mixture..
Bringing the juice to a boil 
when I added each new steak to the skillet.
Then cooking as directed above. 

Juicy.
Tender. 


Full of flavor.
Perfect.

Grilled Cajun Pork Chops


My 23 yr old son is an awesome cook. He has taken what I taught him and expanded his horizons with new seasonings and marinades. When it comes to grilling...he's one of the best! (I have an older son who is just as great!) You name it. He grills it.

Tonight we had Grilled Cajun Pork Chops. Another one of his 'inventions'. See the juice on the plate above. That juice came out of the pork chop when I cut in to it! 
They were so juicy and tender!
The seasonings were strong enough to taste, 
but not over powering. 

Another one of his greater creations!

Grilled Cajun Pork Chops
4 Butterfly Pork Chops
2 tsp Beer Can Chicken seasoning
1/2 - 1 tsp N'Orleans Cajun seasoning
2 tsp Smokehouse Maple seasoning

Prepare your grill to medium heat.
Mix seasonings together and sprinkle on both sides of meat.
Grill until done and juices run clear...approx 20 minutes
turning after 10 minutes. 
Cut with a knife to check 'doneness'.

And that's it folks!
Some of the best Pork Chops you'll ever taste!

Company Breakfast Casserole


Who doesn't love a breakfast casserole?
You can prepare it the night before,

 pop it in the fridge and then in the oven first thing the next morning.
I found this recipe in Gooseberry Patch Christmas In The Country.





When I can get the whole family together for breakfast, 
this is the dish they ask for!

The large croutons prevent it from being 'soggy' 
like some of the other breakfast casseroles I've tried. 
The cornflakes on top add a little crunch!

Company Breakfast Casserole

6 oz pkg seasoned croutons (I use the Texas Toast style)
1 lb ground pork sausage, browned and drained
1 cup shredded cheddar cheese
8 eggs
3 cup milk
1/2 t. ground mustard
1/2 t. salt
2 cups corn flake cereal, crushed
1/2 cup butter, melted

Place croutons in the bottom of a lightly greased 13" X 9" baking pan; top with sausage. Sprinkle with cheese; set aside. Beat eggs, milk, mustard and salt together; pour over cheese. Cover; refrigerate overnight.

 Before baking, top with cereal; drizzle with butter. Bake at 350 degrees for 45 minutes; cool for 10 minutes. Serves 6 to 8.

Ham and Cheddar Cornbread

I love quick and easy recipes like this...I can just throw them together at the last minute after a busy day or when I have unexpected company. I found this recipe in Gooseberry Patch Homemade Christmas. Excellent cookbook, by the way!

The combination of the ham and the cheddar cheese tucked in this sweet cornbread will melt in your mouth! I could eat this alone as a meal!




Ham and Cheddar Cornbread


2 8-1/2 oz pkgs cornbread mix
2/3 cup milk
2 eggs, beaten
1/3 lb thinly sliced deli ham
6 slices Cheddar cheese

Combine dry cornbread mix, milk and eggs; mix well. Pour half of the batter in to a 9"X9" baking pan sprayed with non-stick spray. Layer ham and cheese slices carefully over batter.







Spread remaining batter over cheese. Bake at 400 degrees for 20 to 25 minutes, until a toothpick inserted in the center comes out clean.
Cut into squares; serve warm. Serves 6 - 8. (I cut mine in to 9 pieces and they were the perfect size!)






See all that melted cheese? Mmmmm....it sure was good! My son and his friend said it was like eating a Cornbread sandwich!

I had a few pieces left over, so I covered it and put it in the fridge. One of the guys got a piece a few hours later, heated it for a few seconds in the microwave and said it tasted like it was "fresh out of the oven"!
