Pineapple Casserole


I've made this recipe for a ladies luncheon, church potlucks, and for a holiday meal and it was always a big hit...one of the most asked for recipes!

Don't hesitate making this casserole because it sounds different. You'll be very surprised how well it all comes together and tastes so wonderful! I've had several turned up noses over this dish, but once they tasted it...well, needless to say, there wasn't any left!




Pineapple Casserole 

½ cup sugar
3 T. all-purpose flour
1 cup shredded cheddar cheese
20 oz can pineapple chunks, drained and 3 T. juice reserved
½ cup round buttery crackers, crushed
1/4 cup butter, melted

Stir together sugar and flour in a large bowl; gradually stir in cheese.



Add pineapple; mix well.


Spoon into a buttered 1 ½ quart casserole dish.


In a separate bowl, combine cracker crumbs, melted butter and reserved pineapple juice, until well blended.


Sprinkle cracker mixture over pineapple mixture. Bake, uncovered, at 350 degrees for 20 - 30 minutes, until golden. 

You'll be so surprised at how tasty this casserole is!

  4. If you haven't made this baked pineapple, YOU Should! I made it today to go with our Easter Ham. What a wonderful combination of salty and sweet. It was a great addition to our Holiday meal. DH said, "Don't forget where this recipe came from"!
