Blueberry-Sausage Breakfast Cake w/ Blueberry Sauce


I couldn't just leave you with one recipe for this book review....
There are so many delicious dishes to choose from!

Breakfast is always a weekend thing around here. 
We all get up at different times and get out the door as quick and we can, 
so cooking breakfast is almost impossible. By the time the last person ate, 
it would be cold. It's just easier to cook up a quick bowl of oatmeal or cold cereal. 
So, when the weekend comes around...breakfast is my favorite meal to cook!

This Blueberry-Sausage Cake was a big hit.

A little bit of zip from the sausage to add to the sweetness of the blueberries. 
Perfect combination!

Before I give you the recipe,

So, I'd like to introduce you to the following recipe...
straight from the pages of Breakfast Anytime...

Blueberry-Sausage Breakfast Cake

 2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup butter
3/4 cup sugar
1/4 cup brown sugar, packed
8 oz container sour cream
2 eggs
1 lb ground pork breakfast sausage, 
browned and drained
1 cup blueberries
1/2 cup chopped pecans

Mix flour, baking powder and baking soda in a bowl; set aside.
Beat butter until fluffy in a large bowl with an electric mixer at medium speed.
Add sugars and sour cream; beat until combined.
Add eggs, one at a time, beating until combined.
Add butter mixture to flour mixture.
Fold in sausage and berries.
Pour batter into an ungreased 13x9 baking pan.
Spread evenly in pan; sprinkle pecans on top.
Bake, uncovered, at 350* for 35 - 40 minutes,
until a toothpick comes out clean.
Cool on a wire rack; cut in to squares.
Serve with warm Blueberry Sauce.
Serves 15

Blueberry Sauce
1.2 cup sugar
2 TBSP cornstarch
1/2 cup water
2 cup blueberries
1/2 cup lemon juice

Combine sugar and cornstarch in a medium saucepan; 
add 1/2 cup water and berries.
Cook and stir over medium heat until thickened and bubbly.
Cook and stir 2 more minutes.
Stir in lemon juice; cool slightly before pouring over cake.
