Have you ever wanted to try a recipe just because the ingredients sounded a bit odd together? Well, this is one of those recipes. Who would have ever thought that bacon, onion, corn, green onions and thyme would blend well together?
Well, Kim McCallie did! She just put a few ingredients together that she had on hand and Shazam! She had a perfect side dish! And Gooseberry Patch thought so too....they published her recipe in the new cookbook Fresh From the Farmstand!

Saute bacon pieces and chopped onion in olive oil
Remove bacon mixture from the skillet
and add the frozen corn to the drippings
This is where I added my green onion...instead of at the end.
We like ours cooked a little bit more.
When corn is heated through, add the bacon mixture to the skillet and mix together
You are going to be surprised
at how well this corn dish tastes!
