Sauteed Tilapia in Lemony Butter Sauce

Sauteed Tilapia
in Lemony Butter Sauce

1/4 cup all-purpose flour
salt and pepper to taste
1/2 lb tilapia fillets
2 T olive oil
4 T butter, divided
juice of 1 lemon

Combine flour, salt and pepper in a shallow dish.
Dredge fish in flour mixture; set aside. 
Heat olive oil and 2 TBSP butter in a skillet over medium-high heat.
Saute' fish in oil mixture for 3 minutes per side. 
Remove fish to a plate; wipe out skillet with a paper towel.
Reduce heat to low; melt remaining butter in skillet.
Add lemon juice; cook and stir for about one minute.
Return fish to skillet and warm through. 
To serve, spoon sauce from skillet over fish.
Makes 2 servings.
