Savory Onion-Roasted Veggies

Today's recipe is from 
Meatless Monday!

Savory Onion Roasted Veggies

1.35 oz pkg onion soup mix
1 lb. potatoes, quartered or cubed
16 oz pgk baby carrots
1 red pepper, cut into chunks
1/3 cup olive oil
juice of 1/2 lemon
2 T. fresh parsley, chopped
garlic powder, salt and pepper to taste

Combine all ingredients in a large bowl; toss to coat vegetables well.
Spray a baking sheet with non-stick vegetable spray;
spread mixture evenly on pan.
Bake at 425*, stirring every 10 minutes, for 40 minutes, or until potatoes are tender and other vegetables are golden and carmelized.
Makes 4 servings.
 
Actually....this recipe will feed more than four!

 Perfect along side a steak, hot off the grill!

    Liked gooseberry and i have been super sick and lost most of my stomach last year, but i am doing great now and even though i can't eat much i have gone back to cooking with a passion! My grown kids are loving it and all the new great recipes i have found to share with them. so im looking forward to a new cookbook to continue enjoying my life of cooking!

    I just recently purchased my 1st Gooseeberry Patch cookbook - "Comfort Foods" while shopping at a store. The colorful cover caught my eye so I had to check it out.
