There are so many good recipes to chose from.

But, I figured since I have a recipe published in this chapter,
I would share mine with you!
It's a quick and easy recipe ....

I know it's not the most attractive dish,
so don't let the looks be deceiving...
....because the taste is delicious!
Potatoes and Chicken Sante Fe
4 medium potatoes, cut in to 3/4 - 1 inch cubes
and microwaved for 8 - 10 minutes until tender
I leave the skins on.
1 lb boneless skinless chicken breasts, cut in to 3/4 inch cubes
2 TBSP olive oil
1 cup salsa
1 small can or 1 cup of corn
(I use frozen, thawed)
While potatoes cook, in a large skillet toss and brown chicken
in oil over high heat for 5 minutes.
Add potatoes; saute and toss until potatoes are lightly browned.
Add salsa and corn, stir until heated through.
Serves 4

Simple, but delicious!

This 'spice' can be used for Taco's,
to season chicken, or add to dips.

Mix-Your-Own Taco Spice
2 T chili powder
1 T. ground cumin
2 t. salt
2 t. pepper
1 t. paprika
1/2 t. garlic powder
1/2 t. onion powder
1/2 t. dried oregano
1/2 t. red pepper flakes
In a small bowl, mix together all ingredients.
Store in a small covered jar.
Makes about 1/3 cup
