Cheddar-Parmesan Bread

Okay. So there's this cookbook by Gooseberry Patch called Almost Homemade. 

If I am stumped as to what to cook for supper, this cookbook helps me out a lot. 
Why? ask. Because this cookbook is filled with down home cookin' kind of recipes that sometimes uses prepared foods to help with convenience...for instance the following recipe uses baking mix, another recipe I love uses frozen meatballs, and another uses cinnamon rolls. 
Hence the name Almost Homemade!
Yep...another Gooseberry Patch keeper! 

Cheddar-Parmesan Bread

1 1/2 cup biscuit baking mix
1 cup shredded Cheddar cheese
1/4 cup grated Parmesan cheese
1/2 tsp dried oregano
1/2 cup milk
1 egg, beaten
2 T. butter, melted
Garnish: grated Parmesan cheese

Mix first 6 ingredients in a bowl; stir together to form a thick batter. 
Spoon into a greased 8 in. round cake pan. 
Drizzle with melted butter; sprinkle with additional Parmesan cheese.
Bake at 400 degrees for 20 minutes, or until a toothpick inserted in the center comes out clean.
Let cool for 10 minutes; cut into wedges and serve warm. 
Makes 6 - 8 servings.

or a hot bowl of soup or stew!
