Red Velvet Cake Balls

Yes, I know some of them look a bit messy. 
But it's the taste that counts, not the appearance...right?

My two oldest grandchildren love to cook with me. 
They picked out this recipe some time back, and we finally found the time to make them.
So, I loaded up my ingredients and headed over to my son and daughter-in-laws house!
We had so much fun...I can't wait to cook with them again!


Red Velvet Cake Balls

18 1/2 oz pkg red velvet cake mix
16 oz container cream cheese frosting
16 oz pkg regular or white melting chocolate

Prepare and bake cake mix following package directions for a 13 x 9 cake

 Licking your fingers is a good idea. 
Double dipping the whisk (my grandson) is not!

Allow the cake to cool. 
We were short on time so I cut the cake in to pieces, placed them on a plate and in the freezer to speed up the cooling process.  

Crumble cooled cake in to a large bowl.  

Stir in cream cheese frosting.

Roll mixture into balls the size of quarters.

I think, next time, we'll wear plastic gloves.

Place on baking sheets and chill for several hours or overnight. 
Because we didn't have this amount of time, I rushed the cooling again, by placing them in the freezer for about an hour. Perfect!

Melt chocolate in a double boiler.
I used almond bark.
I placed it in a bowl and set it in the microwave for 1 min 30 seconds,
STIRRING AFTER EACH 20 SECONDS.
Dip cake balls into chocolate and place on wax paper.
We used a toothpick to pick up the cake balls with. 
It made it so easy to roll them around to get completely covered.
(this one was mine...can you tell?)

and Wa La!!

 Like I said....
it's the taste that counts.
Not the appearance!
(in my opinion....they're perfect!!)

We had so much fun. 
I actually didn't care what they looked like!

Blogger is being stubborn again today.
