Garlicky Chicken & Redskin Potatoes


Yum!
That's all I could say when I saw this recipe in the Gooseberry Patch cookbook 5-Ingredient Family Favorites
It smelled so good baking in the oven. I could hardly wait to take it out and sit down for supper. This dish reminds me of Sunday dinners that my momma used to cook!

The recipes are easy to prepare and, of course..like the title says, don't require a lot of ingredients. Your meal tastes as though you've been slaving in the kitchen all day!
On some days, that's exactly what I need.

Garlicky Chicken & Redskin Potatoes
from Vickie at Gooseberry Patch
Serves 8 (I cut the recipe in half)

8 chicken breasts
3 lbs redskin potatoes, halved
20 garlic cloves, peeled
1 TBSP fresh thyme, chopped
salt and pepper to taste
1/4 cup olive oil
Optional: Fresh thyme sprigs

Place chicken in an ungreased roasting pan. Arrange potatoes and garlic around chicken. Sprinkle with seasonings, and drizzle with oil.
Bake, uncovered, at 425 degrees for 20 minutes. Reduce oven temp to 375 degrees. Continue baking for 45 min - 1 hour longer, or until chicken is golden and juices run clear.
Transfer chicken to a platter. Spoon potatoes and garlic around edges. Garnish with thyme sprig if desired.
