Lori's Tater Wedges

4 baking potatoes, cut into 8 wedges each
1 T olive oil
1/8 tsp salt
1/4 tsp pepper
Optional: favorite seasoning blend to taste
Place potato wedges in a large bowl.
Drizzle with olive oil and sprinkle with seasonings.
(I used 2 tsp No-Salt Seasoning)
Toss until evenly coated.
Arrange potato wedges in a single layer on a baking sheet sprayed with non-stick vegetable spray.
Bake, uncovered, at 425* for 30 minutes, until golden.
Makes 4 servings
