Watermelon Cucumber Salad

 I have this friend...her name is Cindy. 
She's my rock. 
She's stood by me through thick and thin.
We don't talk every day like we'd like to. 
Sometimes we go a month without talking because 
we're so busy with our own lives and families. 
 But when we do talk again, it's like we never skipped a day. 
We spend a few minutes getting caught up on what the latest news is, 
then we're off on our normal conversation about 
life, kids, grandkids and recipes we love. 
When we're together, you'd think we were a couple of kids,
because we have way too much fun....
And that's all I'm going to say about that! :-)

This is one of the many recipes that Cindy has shared with me... The perfect summer salad.

Watermelon Cucumber Salad

2 Cucumbers 
3 cups watermelon, cubed and seeded
3 tablespoons of lemon juice
1/4 cup chopped basil
salt to taste 
Peel cucumbers and slice into bite size pieces. 
 Add watermelon and cucumber together and lightly salt. 
 Drain any liquid. 
Toss with lemon juice and chopped basil. 
Serve chilled.
