Ramen Skillet Supper, Sausage Patties and Marinara Sauce and Giveaway




Gooseberry Patch has done it again!
They have a new cookbook that has recently hit the shelves

Of course, we wouldn't expect anything less from them, would we?

Ramen Skillet Supper

1 lb ground beef
2 1/2 cups water
2 3oz beef flavored ramen noodles 
with seasoning packet
1/2 cup stir-fry sauce
3 cups frozen stir-fry vegetables

Brown beef in a large skillet over medium heat; drain.
Add water, one soup seasoning packet, sauce and vegetables.
Bring to a boil.
Reduce heat to medium-low;
cover and cook, stirring occasionally, for 5 minutes,
or until vegetables are crisp-tender.
Break up noodles; add to skillet.
Cover and cook, stirring occasionally, 5 - 8 minutes,
until sauce is thickened and noodles are tender.
Serves 4


Oh, this coobkook is going to be one of my most 'turn to' cookbooks I own.
There are so many quick and easy recipes to chose from.

I have found many recipes for Spaghetti Sauce or Marinara Sauce.....
but something about this one just stood out.
I knew I had to try it.

Now...I know that by looking at this photo you're thinking,
"this just looks like any other sauce"
and yes, you're right, it does.
(the quality pic from my camera doesn't help either!)
But the combination of spices in this sauce over the Italian Sausage Patty....
well...to be honest...I do believe I just found my new favorite recipe!



3 T olive oil
3/4 cup onion, chopped
1 clove garlic, minced
14 1/2 oz can tomato sauce
12 oz can tomato paste
2 cup water
1 tsp sugar
1 tsp salt
1/2 tsp pepper
1 1/2 tsp dried oregano
1 bay leaf
3 T grated Roman cheese
1 lb ground hot Italian pork sausage formed in to 8 patties
16 oz pkg spaghetti pasta, cooked

Garnish: grate Parmesan cheese
I also added Italian bread crumbs...

Heat oil in Dutch oven over medium heat.
Saute onion and garlic until tender.
Stir in tomatoes with juice, tomato sauce, tomato paste, water, sugar and seasonings.
Reduce heat to medium-low and simmer for 30 minutes.
Discard bay leaf; stir in Romano cheese.
Cover and cook for 30 minutes.
Brown sausage patties in a skillet on both sides until no longer pink in the middle, about 10 minutes.
Divide pasta among bowls/plates; top with sausage patty and sauce.
Garnish with cheese (and bread crumbs)
Serves 8

Watermelon Pie





Oh...summer time, summer time, 
sum-sum summertime!

Nothing goes better with the summer heat than watermelon.
Big juicy chunks of watermelon!
I usually scoop mine out with an ice cream scoop 
and store it in a big bowl in the fridge until we're ready to eat it.
It just seems a lot less messy that way.
The little ones tend to like it better like that too. 
They don't have to go outside to eat it!

This Watermelon Pie contains the flavors of summer also...
Watermelon and a hint of lime!
You'll be surprised at how wonderful this pie taste!

Cool and refreshing
Watermelon Pie

1 14 oz can sweetened condensed milk
4 oz non-dairy whipped topping
(use half of an 8 oz container)
1/4 cup lime juice
2 1/2 cups small watermelon pieces or balls (3/4 inch)
1 graham cracker pie crust

My watermelon pieces are larger than they should be.
We enjoy the frozen watermelon in the pie.
If you want your watermelon thawed with the pie,
be sure to make the pieces as directed in recipe

With a whisk, combine sweetened condensed milk
 and whipped topping in a large bowl.
Mix well.
Add lime juice and mix well.
Add watermelon pieces. Mix well. 
Pour into pie crust.
Freeze until firm.
Allow to thaw 10 minutes before serving.
