Skillet Chicken w/ Vegetables and Herbs

My goodness...the recipes in this cookbook are wonderful!
They are easy, delicious and are prepared with ingredients I normally have on hand. 
Now..you can't beat that in a cookbook can you?

it sure is a Family Favorite now!
Skillet Chicken with Vegetables and Herbs

2 TBSP all-purpose flour
1/8 tsp pepper
1/8 paprika
2 TBSP olive oil
4 chicken breasts
2 red onions, quartered
1 lb new potatoes, quartered
8 oz pkg baby carrots
1 1/2 cup chicken broth
3 TBSP lemon juice
1 TBSP fresh oregano, chopped

Garnish: chopped fresh thyme

Combine flour and seasonings in a small bowl.
Coat chicken breasts with mixture.
Heat oil in a large oven-safe skillet over medium-high heat.
Brown chicken on both sides.
Remove chicken from skillet; set aside.
Add onions and potatoes to skillet;
cook 5 minutes.
Add carrots, broth, lemon juice and oregano;
bring to a boil.
Return chicken to skillet.
Cover and bake at 350* for 20 minutes.
Uncover and bake an additional 15 minutes,
or until chicken juices run clear and vegetables are tender.
Garnish with thyme.
Serves 4
