Fall-O me in to the kitchen for Onion Fried Potatoes!


Those of you that know me personally, know that I make up a lot of my own recipes. I guess I inherited the 'talent', from my momma,  to take what's in the kitchen and make a meal out of it.
This time, I wanted some potatoes...and I wanted them fried. I'm sure a lot of you already fry your potatoes like this...we have for as long as I've known how to cook...but this time we added Pepper Jack Cheese! We've been eating healthier around my house, so I try not to fry too much or eat too much cheese...but sometimes, it just happens. (and the waistline shows it!)

I don't always have exact measurements...but I'll do the best I can!

Onion Fried Potatoes
One potato per person, sliced (unpeeled). I used four.
One onion, sliced.
One bunch of green onions.
8 oz pkg Pepper Jack cheese, shredded
1/2 inch of oil in your skillet

Add the green onions, potatoes and half the onions to the hot oil in your skillet. Cook until the bottom side is golden in color, then flip the potatoes. Add the other half of the onion.


Cook until golden and potato is soft in the middle.

Scoop potatoes from skillet and place on a platter covered with a paper towel (to catch the extra oil). Blot top of potatoes with a paper towel...I try to remove as much oil as possible. (my waistline thanks me)
Remove paper towel from underneath the potatoes.

Sprinkle Pepper Jack cheese on top of potatoes. If the cheese doesn't melt like you'd like it, it's ok to pop them in the microwave for about 30 seconds to melt the cheese!

  1. Tina - these look wonderful -- potatoes are but a memory to my low carb self but I may have to make this and sub in some cauliflower for the potatoes :)

  2. They look delicious. We don't do any fried foods in the house, my husband can't stand the smell of it! I will have to come over someday so you can make them for me!

  4. When my very picky husband loves it, all is great, they were great!!!! Just made 2 potatoes with maybe 3 T. oil, cut the onions down by half, added a little Lawry's garlic salt, Lawry's season salt and pepper. Didn't need to drain on paper towels either. They were very yummy!!! We will make again and again! Thank you for the recipe!
