Cinnamon Pudding Cake

I LOVE cinnamon! It's my favorite spice to cook with during the holidays and winter months!
Well, actually...all year long!
I found this recipe in Gooseberry Patch Farmhouse Christmas last year. And so happy I did! We loved it! It's the perfect dessert with all of it's cinnamon goodness... And the recipe calls for ingredients that you would normally keep on hand!

Cinnamon Pudding Cake
SERVES 12

1 cup sugar
2 T. butter
1 cup milk
2 cup all-purpose flour
2 t. baking powder
2 t. cinnamon
1/4 t salt
Mix all ingredients together and blend well. Pour into a greased 13"x9" baking pan, add topping.

Topping:
2 cups brown sugar
2 T butter
1 1/4 cup water
Combine ingredients in a saucepan; bring to a boil.
Pour mixture over the cake batter and bake at 350 degrees for 25 minutes.

Needless to say, only one piece of this cake and I've exceeded my daily caloric intake...but it was well worth it! This recipe is a keeper!
