Cheese and Bacon Potato Rounds


 Need a simple side dish? This would be it!

I've made something like this before, but used potato skins. When I saw these on Pinterest, I knew I wanted to try them again!

CHEESE AND BACON POTATO ROUNDS

4 baking potatoes, cut into 1/2 inch slices (I used Yukon gold)
1/4 cup melted butter
8 slices bacon - cooked and crumbled (I used 1 pkg bacon pieces)
8 ounces shredded Cheddar cheese
1/2 cup chopped green onions

  1. Preheat oven to 400*.
  2. Brush both side of potato slices with butter; place them on an ungreased cookie sheet. Bake for 30 to 40 minutes or until lightly browned on both sides, turning once. (I baked mine until they were just done)
  3. When potatoes are ready, top with bacon, cheese, and green onion; continue baking until the cheese has melted 

Great appetizer too!
