BBQ Roasted Salmon





I was looking for the latest recipe that was shared on the Gooseberry Patch web site, and this recipe is the one that popped up. And how convenient it was...I had salmon thawing for supper and wasn't exactly sure how I wanted to cook it!
I am so glad that I came across this recipe...it's something a little different than what I'm used to on fish, but it's. oh. so. good! And I had all the ingredients on hand!
The seasoning from the spices that are rubbed on top seep all the way through these salmon filets! Every bite of this fish is the best bite! You can't go wrong with this recipe! Definitely a "Make This Again" flag on this page in my cookbook!





BBQ Salmon ....pg 140 Quick and Easy Autumn
4 T brown sugar, packed
4 tsp chili powder
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp cinnamon
4 salmon fillets
Combine sugar and spices in a shallow dish. Dredge fillets in sugar mixture. (I rubbed the sugar mixture on my fillets)
Spray 11 x 7 baking pan with non-stick vegetable spray. Arrange fillets in pan. Bake, uncovered at 400* for 12 minutes or until fish flakes easily with a fork.
Serves 4
