Before I share my recipe with you,

You're going to love these muffins!
I just know you will.
Because I do!
And my family does!
And because it's a recipe that I submitted to Gooseberry Patch
Yep, yep, yep.....and they published it in this 
Hometown Christmas cookbook!



Maple-Pecan Muffins

 2 cups all-purpose flour
1/4 cup light brown sugar, packed
1 1/2 tsp baking powder
1/4 tsp salt
1 egg
1/2 cup milk
1/2 cup maple syrup
1/3 cup margarine, melted
1 tsp vanilla extract
1 cup chopped pecans
1 TBSP sugar
1/8 tsp cinnamon

In a large bowl, mix flour, brown sugar, baking powder and salt. 
In a small bowl, beat egg, milk, syrup, margarine and vanilla.
Add mixture to flour mixture; stir just until moistened.
Batter will be lumpy.
Stir in pecans. Spoon batter into paper-lined or greased muffin cups, filling 2/3 full.
Mix sugar and cinnamon in a cup; sprinkle over batter.
Bake at 400* for 15 - 20 minutes, until golden and a toothpick tests clean.
Serve warm.
Makes one dozen.

    I have "liked" Gooseberry Patch since I heard about it on FB! Love the Maple Pecan Muffins. I had to revise it a bit ... they became Maple Walnut Muffins.

    My daughter and I bought the same Gooseberry cookbook for each other for Christmas last year as gifts. So we decided to each keep the others and use it leaving notes. We will return the book this year. I will add this recipe to the collection. Thanks for all the wonderful recipes you provide.
