Mexican Goulash




Mexican Goulash is one of those recipes that I put together one night...a little of this, a little of that.
One of those nights that you have to cook what you have on hand.

Funny though....when you make up a recipe, you find that so many others have made up the same one....same name mostly, ingredients may change up a bit....but it's all pretty much the same great recipe inventing imagination!

Mexican Goulash...simple, delicious...
Perfect with cheesy tortillas or cornbread!

For a little added flavor...once you serve it up on your plate,
stir in a teaspoon or two of sour cream!


Mexican Goulash

16 oz macaroni, cooked and drained
1 lb ground beef, browned and drained
1 oz pkg taco seasoning or your own recipe
2 10 oz cans tomatoes with green chili's (Rotel)
1 14.5 oz can diced tomatoes
11 oz can mexi-corn, drained
1 1/2 tsp garlic powder
1 1/2 tsp cumin
1 tsp ground black pepper


Add taco seasoning to browned ground beef, and cook as directed on package.
Turn fire to medium/high heat.
Add tomatoes, corn, and seasonings.
Stir until combined.
Cook until heated through.

Add macaroni to the beef/tomato mixture.
Stir until combined.

Turn fire to low and cover. 
Simmer for 10 minutes.
