Roasted Garlic and Herb Crusted Chicken


I had chicken breasts out to thaw and didn't have a clue as to what I was going to do with them. I just knew that I wanted chicken for supper.
I picked up the Roasted Garlic and Herb seasoning when I was grocery shopping this weekend so I thought I'd use it tonight. The flavor of this seasoning is pretty bold, so to tone it down a bit, I mixed it with the Italian Style Bread Crumbs. We are trying to cut down on fatty foods as much as we can, so I used the Parkay spray instead of margarine or butter.
Wow...what a great combination! This chicken was delicious, moist and tender..and I have already been asked to make it again....and soon!


Roasted Garlic and Herb Crusted Chicken 

1 cup Italian Style Bread Crumbs
1 1/2 tsp Roasted Garlic and Herb Seasoning
1 TBSP melted butter/margarine
(I used Parkay spray)
4 chicken breasts

Mix together the bread crumbs and seasoning.


Pound your chicken down to 1/2 inch thickness


 Brush each side of the chicken breast with melted butter.


 Dip chicken in bread crumb mixture. 
For a more mild flavor, just coat one side of the chicken.
Place in a baking dish sprayed with non-stick spray.

Bake on 350* for 20 minutes or until juices run clear.

They are so easy to make and taste soooo good!
