Hannah's Apple Pancake




Oh. My. Gosh!!! 
I LOVE this cookbook!
How can I not? 
It's all about cast iron cooking!

This cookbook is everything 
I thought it would be and more! 

Recipes from 
Chicken File' Gumbo
to Stuffed French Toast
to Cast Iron-Roasted Red Potatoes
with Rosemary and Onion!!

Plus there are tips for 
Campfire Dutch Oven cooking!

I had to start with Hannah's Apple Pancake...
not only because that's my youngest daughters name, 
but because the photo looks delicious!
This is one of those times that the finished product 
doesn't look much like the photo in the cookbook...
but it is still just as delicious!

Hannah's Apple Pancake

1/4 cup (1/2 stick) unsalted butter
1/4 cup milk
1 apple (I used Golden Delicious)
2 TBSP sugar
1/2 tsp ground cinnamon
1 large egg
1/4 cup all-purpose flour
Pinch of salt

Preheat the oven to 425*.
Melt butter in a 5 inch cast iron skillet over low heat.

While the butter melts, pour the milk into a 2 cup measuring cup. 
Peel the apple, then cut it off the core and into 4 pieces.
Cut each piece lengthwise into thin slices.
(Mine kind of broke apart while I was slicing them.)

In a small bowl, toss the apple slices with the 
sugar and cinnamon until well coated.

Pour half the melted butter into the milk and whisk well.

Add the apple slices and any loose sugar in the bowl to the hot butter in the skillet.

Cook the apple slices over medium-low to low heat, 
turning them a few times, until softened.
The sugar and butter will get nicely browned and bubbly.
Remove the skillet from the heat.
(do not overcook....like I did)

Add the egg to the milk mixture and whisk to combine.

Add the flour and salt and whisk until the batter is smooth.

Pour the batter over the apples in the skillet, covering them. 

Bake until the pancake puffs up and gets golden on top, 
with patches of brown, about 10 minutes.
My pancake turned out a bit on the wild side!!

Enjoy the pancake straight from the skillet 
or invert in onto a serving plate.
The recipe states that it feeds one generously....or two.
Take my word....it feeds two!

Now, like I said before...my photo doesn't look anything like the photo in the cookbook...
and I'll be the first to tell you my mistake. I was busy preparing the other ingredients and allowed the apples to cook a bit longer than they should have. They are darker and a wee bit softer than they were suppose to be...but like I also said before...
THIS IS DELICIOUS!!

  1. The cookbook sounds wonderful and this recipe is making me very hungry. I do not have a cask iron skillet. I use one on vacation every summer and love it. I think it's time for me to get one.
