Coconut Bread

Do you have a love for coconut, but need something different besides pies, cakes or cookies? Well, this bread is it!

The mild coconut flavor in this delicious bread allows it to be eaten alone...without being smothered in butter. But of course, you can do that too if you'd like!


Coconut Bread

2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups sugar
1 cup vegetable oil
4 eggs
2 tsp coconut extract
1 cup buttermilk
1 cup shredded (sweetened) coconut
1 cup chopped walnuts

Combine flour, baking powder, baking soda and salt, set aside.

        In a large bowl, combine sugar, oil, eggs and coconut extract..


Add dry ingredients alternately with buttermilk, 
stir just until moistened.

Fold in coconut and walnuts.

Pour in to two greased and floured 8 1/2 x 4 1/2 in loaf pans.

Bake at 350* for 1 hour or until breads test done.
Cool 10 minutes in pans before removing to a wire rack to cool completely.

The buttermilk in this recipe makes this bread so moist!
The coconut extract, coconut flakes and walnuts 
makes this bread so delicious!
