Watermelon Pie





Oh...summer time, summer time, 
sum-sum summertime!

Nothing goes better with the summer heat than watermelon.
Big juicy chunks of watermelon!
I usually scoop mine out with an ice cream scoop 
and store it in a big bowl in the fridge until we're ready to eat it.
It just seems a lot less messy that way.
The little ones tend to like it better like that too. 
They don't have to go outside to eat it!

This Watermelon Pie contains the flavors of summer also...
Watermelon and a hint of lime!
You'll be surprised at how wonderful this pie taste!

Cool and refreshing
Watermelon Pie

1 14 oz can sweetened condensed milk
4 oz non-dairy whipped topping
(use half of an 8 oz container)
1/4 cup lime juice
2 1/2 cups small watermelon pieces or balls (3/4 inch)
1 graham cracker pie crust

My watermelon pieces are larger than they should be.
We enjoy the frozen watermelon in the pie.
If you want your watermelon thawed with the pie,
be sure to make the pieces as directed in recipe

With a whisk, combine sweetened condensed milk
 and whipped topping in a large bowl.
Mix well.
Add lime juice and mix well.
Add watermelon pieces. Mix well. 
Pour into pie crust.
Freeze until firm.
Allow to thaw 10 minutes before serving.

  2. Yummy! I can't wait to try this! We grow watermelon in the summer time!!! Almost wanting to go buy a winter (out of season melon) just to try! Love watermelon!
