Cheddar-Parmesan Bread

Okay. So there's this cookbook by Gooseberry Patch called Almost Homemade. 


If I am stumped as to what to cook for supper, this cookbook helps me out a lot. 
Why?..you ask. Because this cookbook is filled with down home cookin' kind of recipes that sometimes uses prepared foods to help with convenience...for instance the following recipe uses baking mix, another recipe I love uses frozen meatballs, and another uses cinnamon rolls. 
Hence the name Almost Homemade!
Yep...another Gooseberry Patch keeper! 


Cheddar-Parmesan Bread

1 1/2 cup biscuit baking mix
1 cup shredded Cheddar cheese
1/4 cup grated Parmesan cheese
1/2 tsp dried oregano
1/2 cup milk
1 egg, beaten
2 T. butter, melted
Garnish: grated Parmesan cheese

Mix first 6 ingredients in a bowl; stir together to form a thick batter. 
Spoon into a greased 8 in. round cake pan. 
Drizzle with melted butter; sprinkle with additional Parmesan cheese.
Bake at 400 degrees for 20 minutes, or until a toothpick inserted in the center comes out clean.
Let cool for 10 minutes; cut into wedges and serve warm. 
Makes 6 - 8 servings.

Perfect along side meat and potatoes,
or a hot bowl of soup or stew!
