Quick & Easy Italian Chicken




 One day I was just playing around in the kitchen...trying to figure out a different way to prepare this chicken breast I had thawed out. When it hit me...Italian Chicken! I took a combination of two separate recipes and put them together and came up with this wonderful dish! 
We love it. It's simple. Just a few ingredients. But, the flavor is wonderful!
Serve it up with your favorite pasta and some garlic bread and you've got a meal!

Italian Chicken

4 chicken breasts
1/2 cup Italian Bread Crumbs
1/4 cup Parmesan Cheese
3-4 TBSP melted butter
(or butter spray)
1 tsp Italian Seasoning
1 cup pasta sauce
1 cup shredded mozzarella cheese


 Mix bread crumbs and parmesan cheese together in a pie plate.
 Dip each piece of chicken in water, then dip in bread crumb mixture.

 Place chicken in baking dish sprayed with non-stick spray.
Drizzle melted butter over chicken, or spray with butter spray.
 Bake on 350* for 20 minutes, or until juices are ALMOST running clear.

 Remove chicken from oven.
Add Italian seasoning to pasta sauce. 
Pour over chicken.
Sprinkle with cheese.
I ran out of the finely shredded cheese and had to use the thicker one.
We didn't realize the big difference in taste of the two. 
We prefer the larger shredded cheese!
Place chicken back in the oven.

Remove from oven when cheese is melted.
See the difference in the two cheeses? 
The larger shred had much more flavor!!

Serve with pasta and bread and call it a meal!
 Supper's ready!

  1. Turned out well but this recipe must have been small breasts because I had to bake mine for close to 45 min or more to cook chicken through
