Mini Mexican Meatloaves


Yep...another recipe I found on Pinterest...
which led me to the Kraft Foods website

They show you four different ways to prepare this recipe.
I chose the Mexican version.
My son had some friends over for a movie, 
so I served these little guys up with some cheese dip and chips!
They turned out to be a big hit!




















Mini Mexican Meatloaves
1 lb ground beef
2 tsp chili powder
(I used Taco Seasoning)
1 pkg (6 oz) stuffing mix
1 cup water
3/4 cup chunky salsa
Mexican/Fiesta style shredded cheese


Add ground beef in a large bowl. 
Add stuffing mix

Then add water

Add chili powder (taco seasoning)

Mix together until well blended.
You may have to use your hands here. 
No....I take that back....you will have to use your hands here. 
Don't be afraid to get your hands a little dirty....


Press meat mixture in to 12 muffin cups 
that have been sprayed with non-stick spray.
Using a spoon, put indention in center of each.


Fill indention with salsa.
Put in the oven to bake approx 30 minutes or until done.

Top with cheese and bake 5 more minutes or until cheese is melted.


And Waaa La!


Aren't they the cutest thing?
But don't let the size fool you.
They are very filling.....

....especially with cheese dip and chips!
